Soccer Manager believes that most of the answers to your questions are covered within our Help.

Look at the individual country leagues (English, Spanish, Italian etc) and find a lower league team that has a sizeable budget. There are rarely other manages in these divisions which means you have no human competition. Buy a few good players (I once had Higuain and Ribery at Nottingham Forest) and you should be able to easily get to grips with managing while not having to worry about results, although you will have to watch your budget. At the same time it's also a good idea to manage a large club with a weakish team such as Newcastle. About a year ago, I was managing Middlesbrough in the second division, ten points clear in my second season and got offered the Arsenal job, as I was rated as the best manager in the game world at the time.
